What a delightful Pet-Nat! This sparkler is made in the "Methode Ancestrale" which is thought to pre-date the Champagne method. The first fermentation is stopped before all of the residual sugar is converted to alcohol, making it lightly sweet and bursting with berry flavors. This would be a wonderful pairing for chocolate, berries, or soft cheeses. Date night perfect.
